  • 1 tbsp tahini
  • ½ tsp chilli oil
  • 1 tsp maple syrup
  • 1 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 2 nests of wholemeal noodles
  • ½ tbsp oil
  • 200g brown mushrooms, halved
  • 2 spring onions, sliced
  • Add the chilli oil, tahini, syrup, vinegar and soy sauce to a large bowl and mix well with 2 tbsp of water to make a sauce.
  • Cook the noodles according to package instructions, then drain and rinse. Meanwhile, heat the oil in a pan and cook the mushrooms until softened and golden. Toss in the noodles and sauces, toss to coat and heat through, then serve with the chopped spring onions and a drizzle of chilli oil.
