Sticky Soy Aubergines



  • 4 baby aubergines, halved lengthwise
  • 2 tbsp clear honey
  • 1 tbsp olive oil
  • 1 crushed garlic clove
  • 2 tbsp soy sauce
  • Pinch of chilli flakes
  • 1 tsp chopped coriander leaves
  • Salt and pepper
  • Preheat the oven to 200C. Toss the halved aubergines with the oil, soy sauce, honey and chilli flakes, then add to a frying pan to stir fry for 4 mins. Season well with salt and pepper.
  • Transfer the pan to the oven and roast for 5 mins, then sprinkle with chopped coriander and serve as a delicious side to a range of meat or vegetarian dishes.
