Ingredients
Method
- 4 tbsp olive oil
- 60g capers
- 1 tsp paprika
- 4 chopped garlic cloves
- 1 chopped red chilli
- 750g squid, sliced into 0.5cm rings
- 2 lemons, 1 juiced, 1 cut into wedges
- 10g chopped parsley
- Heat 2 tsp of oil in a pan and fry the capers for 30 seconds, or until crispy. Remove to a mixing bowl and toss with ½ tsp paprika. Add 2 tbsp of oil to the pan and add half the garlic and chilli. Stir-fry for 10 seconds, then add the squid. Cook for 1 minute until golden, then stir-fry for 4 mins until cooked through.
- Season with salt, a squeeze of lemon and the parsley. Mix and transfer to a serving dish, scattering with crispy capers, more paprika and parsley. Serve with lemon wedges and enjoy!
