Stilton and Thyme Stuffed Mushrooms



  • 2 large flat mushrooms, stalks removed and finely chopped
  • 50g butter
  • 2 thyme sprigs
  • 1 tbsp olive oil
  • ½ sliced onion
  • 2 chopped garlic cloves
  • ½ chopped red pepper
  • 50g stilton
  • 50g fresh white breadcrumbs
  • 50g chopped chives
  • Preheat the oven to 200C. Pop the mushrooms on a baking tray and dot with the butter. Season well and add a sprig of thyme to each mushroom, then bake for 10 mins.
  • Meanwhile, fry the onion and garlic in the olive oil to soften. Add the chopped stalks and red pepper and cook until softened. Spoon the onion mixture into the mushrooms, top with the stilton and sprinkle with breadcrumbs. Bake for 7 mins, then serve with a scattering of chopped chives.
