Stir-Fried Lamb’s Liver

  • 1.5 tbsp oil
  • 225g sliced lamb’s liver
  • 1 leek, sliced
  • 1 red capsicum, chopped
  • 1 red chilli, chopped
  • 1 tsp oregano
  • 1 crushed garlic clove
  • 100g spring greens or similar, sliced
  • 1 orange, zest and 2 tbsp juice
  • 2 tbsp red wine
  • Heat 1 tbsp of oil in a pan and stir-fry the liver for 3 mins, until pale brown in colour. Remove to a plate and set aside, leaving the juices in the pan. Toss in the leek, capsicum and chilli with the rest of the oil, stir-fry for 2 mins, then add the garlic, greens and oregano and fry for 30 seconds more. Return the meat to the pan with the orange juice and zest, and the wine. Season, bubble for 2 mins, then toss everything together and serve.
