Sweet Ginger Tofu

Ingredients

Method

  • 250g firm tofu
  • 2 tbsp oil
  • 1cm piece of ginger, sliced
  • 200g pak choy leaves
  • 1 tbsp rice wine
  • 1 tbsp rice vinegar
  • ½ tsp chilli flakes
  • Cooked rice, to serve
  • For the Marinade
  • 1 tsp dark soy sauce
  • 2 tbsp light soy sauce
  • 1 tbsp grated ginger
  • 1 tbsp brown sugar
  • Mix together the marinade ingredients in a bowl, and toss in the tofu piece to marinate for 15 mins. When ready, heat up a wok and add half the oil. Add the slices of ginger and stir fry for a few seconds, then add the pak choy and cook for 2 mins. Add a splash of water, cook for 2 mins more, then remove and set aside with a sprinkling of salt.
  • Add the remaining oil to the wok, then add the tofu pieces and stir fry for 10 mins to brown all over. Season with the rice vinegar and wine, and add the marinade to the wok and let it bubble and reduce for a few mins. Sprinkle with chilli flakes, toss well, and spoon onto the pak choy leaves to serve with rice.
