Ingredients
Method
- 1 tbsp olive oil
- 2 chicken thighs
- Salt and pepper
- 1⁄2 onion, chopped
- 55g sundried tomatoes in oil
- 2 tbsp soy sauce
- 1 tbsp white wine vinegar
- 1 tbsp clear honey
- Small handful of chopped parsley
- 2 sprigs rosemary, to garnish
- Heat up the oil in a frying pan, then season and fry the chicken thighs until golden all over.
- Add the onion to the pan, and fry for a few minutes to soften. Pour in the honey, white wine vinegar, soy sauce, and sundried tomatoes, and simmer for 3-4 minutes until the chicken is cooked through and sticky with the glaze. Stir in the chopped parsley, and serve hot garnished with rosemary.
