Tempura Prawns with Sesame Soy Dipping Sauce

  • 16 large green prawns, peeled and deveined
  • 1 cup plain flour
  • ½ cup cornflour
  • 1 tsp baking powder
  • 1 cup cold sparkling water
  • Vegetable oil, for deep frying
  • ¼ cup soy sauce
  • 2 tbsp mirin
  • 1 tbsp sesame oil
  • 1 tsp finely grated fresh ginger
  • 1 tbsp toasted sesame seeds
  • Make the dipping sauce: combine soy sauce, mirin, sesame oil, ginger and sesame seeds in a small bowl. Set aside.
  • Heat oil in a deep heavy-based saucepan to 180°C. In a separate bowl, lightly mix the flours and baking powder with cold sparkling water until just combined (a few lumps are fine).
  • Dip prawns in the batter and fry in batches for 2–3 minutes until crisp and golden. Drain on paper towel and serve immediately with the dipping sauce.
