Tex Mex Beef Burgers
- 400g quality beef mince
- 2 crushed garlic cloves
- 300g grated courgette
- 1 diced onion
- ½ tsp each ground cumin, coriander and smoked paprika
- ¼ tsp crushed black peppercorns
- 1 tsp sea salt flakes
- Buns, salad, guacamole and salsa, to serve
- Add the grated courgette to a tea towel or cheesecloth and squeeze out as much moisture as possible. Meanwhile, preheat the grill to a medium-high setting.
- Mix the burger ingredients into the grated courgettes until well combined. Season liberally with the salt and pepper, and divide the mixture into 4 equal amounts. Roll into a ball with damp hands and flatten into a patty, then cook for 12-15 mins, turning regularly until cooked through. Stuff into buns with all your favourite Tex-Mex additions, and enjoy.
