Tex Mex Lime and Bean Salad

Ingredients

  • 2 limes
  • 1 tbsp olive oil
  • ¼ tsp chilli powder
  • 400g tin of mixed beans, drained
  • 5 chopped baby tomatoes
  • 100g tin of sweetcorn, drained
  • ½ red onion, diced
  • ¼ cucumber, diced
  • Small handful of chopped parsley and mint leaves
  • Pickled jalapenos and tortilla chips, to serve
  • Zest one lime and add the zest and a squeeze of juice to a small bowl with the chilli powder and olive oil. Remove the peel and pith from both limes, segment and add to a separate large bowl with the beans, tomatoes, onion, corn, cucumber, mint and parsley. Season and mix well.
  • Toss the bean mixture with the lime zest dressing, then scatter with the jalapenos and tortilla chips right before serving. A perfect vegan side to any barbecue or Tex Mex feast!
