Thai Beef Larb
- 300g basmati rice, cooked
- Olive oil
- 2 garlic cloves, crushed
- 500g beef mince
- Pinch of chilli flakes
- ½ tbsp fish sauce
- 2 tsp dark soy sauce
- 2 eggs
- 2 limes
- Chopped coriander
- Heat the oil in a large frying pan. Sizzle the garlic for 2 mins, then add the mince, chilli flakes, soy sauce and fish sauce. Brown the meat all over, then remove the pan from the heat.
- Heat some more oil in another frying pan. Crack in the eggs and leave to set for a couple of seconds, then break them up before adding the cooled rice and some seasoning. Toss until golden. Return the mince to the hob to reheat, then squeeze in the lime juice and season again. Toss through the coriander, divide the rice and beef between bowls, and serve with another sprinkling of coriander.
