Thai Crispy Meatballs
- 2 eggs
- 75g turkey mince
- 90g breadcrumbs
- 1 tsp quality green curry paste
- 2 tbsp plain flour
- Preheat your oven to 180C. Beat one of the eggs in a mixing bowl, then pour in 30g of the breadcrumbs, the mince, and the curry paste. Mix it all up together until well combined, then separate the mixture into four, and roll into roughly shaped balls.
- Beat the second egg in a bowl, and pour the flour and remaining breadcrumb onto separate plates. Roll the meatballs firstly in the flour, then in the egg, and finally in the breadcrumbs. Stick the meatballs on a baking tray, and cook for 20-25 minutes, or until cooked through and golden all over. Serve with a green salad and pickles. Nice.
