Thai Fusion Halloumi Salad

Ingredients

  • 225g sliced halloumi
  • 1 tsp oil
  • 10g chopped coriander
  • 500g mixed baby tomatoes, halved
  • 10g chopped mint leaves
  • 30g chopped peanuts
  • For the Dressing
  • 2 crushed garlic cloves
  • 2 chopped red chillies
  • ½ tbsp sugar
  • 2 tbsp Thai fish sauce
  • 2 limes, juice only
  • Heat the oil in a frying pan and fry the halloumi slices for 3 mins on each side, or until golden and charred. Meanwhile, make the dressing by mixing the garlic, chillies, fish sauce, sugar and lime juice in a bowl. Set aside 2 tbsp of the dressing in a separate bowl, then mix the tomatoes, coriander and mint to the original bowl.
  • Arrange the tomato mixture on a platter and top with the fried halloumi. Drizzle with the dressing from the second bowl, then sprinkle with more chopped mint and peanuts to finish.
