  • 2 chopped sweet potatoes
  • Olive oil
  • 400g minced pork
  • 1 tbsp red curry paste
  • ½ grated red onion, ½ diced
  • Chopped coriander
  • 1 mango, diced
  • 1 chopped red chilli
  • ½ lime, juice only
  • Lettuce and buns, to serve
  • Preheat the oven to 200C. Toss the potato wedges in ½ tbsp of oil and sprinkle with salt. Bake for 25 mins or until very tender. Meanwhile, mix the mince with the curry paste, grated onion and half the chopped coriander. Season and form into 4 patties. Brush with oil and griddle for 5 mins on each side.
  • Make the mango salsa by mixing the mango, chilli and remaining coriander with the lime juice. Serve in buns with lettuce and sweet potato wedges, with the salsa on the side or slathered over the burger itself.
