What you'll need: 1 red onion, sliced 1 red chilli, sliced 2 garlic cloves, sliced 300g cooked brown rice 250g raw large peeled prawns 1 tbsp dark soy sauce 75g peas 4 large eggs 1 tbsp fish sauce Small bunch of coriander, roughly chopped Chilli sauce to serve Serves: 4
What you'll need:
- 1 red onion, sliced
- 1 red chilli, sliced
- 2 garlic cloves, sliced
- 300g cooked brown rice
- 250g raw large peeled prawns
- 1 tbsp dark soy sauce
- 75g peas
- 4 large eggs
- 1 tbsp fish sauce
- Small bunch of coriander, roughly chopped
- Chilli sauce to serve
Serves: 4
Method
First
Cook the onion, garlic and chilli in a wok with some oil for a couple of minutes, until softened. Add the prawns and the peas, and cook for a further minute or two. Throw in your cooked brown rice, and continue to stir and toss it all together, until it gets very hot. Add the soy and fish sauce, chuck in your chopped coriander, and stir well. Turn down the heat while you get onto the next step.
Second
Fry your four eggs with some seasoning. Serve the rice and prawns mix in bowls, top with a fried egg, then scatter some more fresh coriander over the top and douse with hot chilli sauce.
