Thai-Style Fried Rice with Prawns

  • 2 tbsp veg oil
  • 1 sliced red onion
  • 2 sliced garlic cloves
  • 1 sliced red chilli
  • 250g large prawns, peeled
  • 300g cooked brown rice
  • 75g peas
  • 1 tbsp dark soy sauce
  • 1 tbsp Thai fish sauce
  • Small bunch of coriander, chopped
  • 4 eggs
  • Chilli sauce, to serve
  • Heat 1 tbsp of oil in a wok and fry the onion, chilli and garlic for 3 mins. Add the prawns, cook for 1 min more, then tip in the peas and rice. Toss and fry for a couple of minutes, then pour in the soy sauce and fish sauce, along with the coriander. Heat the remaining oil in a pan and fry the eggs as you like them, season well, then serve the fried rice in bowls with an egg on top and drizzle of chilli sauce.
