Ingredients
Method
- 1 tsp chopped parsley
- 2 sliced spring onions
- 100g grated cheddar or gruyere
- 75g diced camembert
- 4 slices of bread
- Mustard, for spreading
- 2 tbsp fruit chutney
- 50g softened butter
- Salt and pepper
- Pickled nuts, cornichons, and sliced apple to serve
- Tip the herbs and spring onions into a bowl along with the cheeses and some seasoning. Mash with a fork. Spread two bread slices with mustard, and the other two with chutney. Divide your cheese mixture between the chutney-slathered slices, and sandwich with the others. Generously butter the outside of the sandwich.
- Heat a large frying pan, and pop the sandwich in the pan. Cook for three mins on each side, or until the bread is golden and crispy. Cut in half, and serve with cheese board accompaniments.
