Tofu with Miso Dressing

  • 1.5 tbsp soy sauce
  • ½ tbsp rice vinegar
  • ½ tbsp brown miso
  • ½ tsp sesame oil
  • ½ tsp maple syrup
  • ½ tsp grated ginger
  • 1 sliced garlic clove
  • 2 tbsp oil
  • 200g tenderstem broccoli
  • 300g silken tofu
  • 2 sliced spring onions
  • 1 tsp toasted sesame seeds
  • Make the dressing by mixing the soy sauce, vinegar, sesame oil, miso paste, ginger and maple syrup in a small bowl. Set aside.
  • Add half the oil to a frying pan and toss in the broccoli and garlic for 2 mins. Stir in 5 tbsp of water and cook for 5 mins or until the broccoli is just tender. Meanwhile, drain the tofu and cut into 1cm-thick slices. Add the broccoli to serving plates, top with the tofu and spoon over half the dressing. Scatter with spring onion and sesame seeds.
  • Heat the remaining oil in the same frying pan. When smoking, drizzle over the plate to wilt the spring onions. Serve with steamed rice and enjoy.
