Tofu with Miso Dressing
- 1.5 tbsp soy sauce
- ½ tbsp rice vinegar
- ½ tbsp brown miso
- ½ tsp sesame oil
- ½ tsp maple syrup
- ½ tsp grated ginger
- 1 sliced garlic clove
- 2 tbsp oil
- 200g tenderstem broccoli
- 300g silken tofu
- 2 sliced spring onions
- 1 tsp toasted sesame seeds
- Make the dressing by mixing the soy sauce, vinegar, sesame oil, miso paste, ginger and maple syrup in a small bowl. Set aside.
- Add half the oil to a frying pan and toss in the broccoli and garlic for 2 mins. Stir in 5 tbsp of water and cook for 5 mins or until the broccoli is just tender. Meanwhile, drain the tofu and cut into 1cm-thick slices. Add the broccoli to serving plates, top with the tofu and spoon over half the dressing. Scatter with spring onion and sesame seeds.
- Heat the remaining oil in the same frying pan. When smoking, drizzle over the plate to wilt the spring onions. Serve with steamed rice and enjoy.
