Tofu with Veggie Fried Rice
- 2 tbsp olive oil
- ½ lime, juice and zest only
- Pinch of chilli flakes
- 2 tbsp light soy sauce
- 2 tbsp clear honey
- 2 tbsp veg oil
- 150g cubed tofu
- For the Rice
- 2 tbsp veg oil
- ¼ sliced onion
- 1 crushed garlic clove
- ¼ red capsicum, chopped
- Handful of baby spinach
- 150g cooked long grain rice, cooled
- Combine all the marinade ingredients for the tofu - except the veg oil - and mix well. Add the tofu, stir to coat, then leave to marinate for at least an hour in the fridge. When ready, remove the tofu from the marinade and fry for 10 mins in the oil. When golden all over, remove from the pan and drain on kitchen paper.
- For the rice, heat the oil in the pan and fry the onion and garlic for 3 mins to soften. Add the capsicum, fry for 2 mins more, then add the spinach, rice and reserved marinade. Heat for 4 mins, stir-frying until everything is coated and piping hot. Serve the rice with the crispy tofu on top - perfect!
