  • 400g diced tomatoes
  • ½ sliced leek
  • 3 crushed garlic cloves
  • 1 sliced onion
  • 100g feta
  • Pinch of chilli flakes
  • 400g wholemeal spaghetti
  • Basil leaves
  • Preheat the oven to 200C and mix the tomatoes, leek, onion, garlic and a splash of olive oil with some seasoning in a roasting dish. Place the block of feta in the centre of the tomato mixture, drizzle with more oil and the chilli flakes, and bake for about 40 mins.
  • Meanwhile, cook the spaghetti in boiling salted water until al dente, then drain and reserve a splash or two of the cooking water. Add the cooked pasta to the roasting dish with the basil leaves, and stir until combined. Season, then serve with some more basil scattered on top.
