Tomato and Garlic Prawns
- 1 tbsp olive oil
- 2 sliced garlic cloves
- 1 red chilli, deseeded and chopped
- 150g cherry tomatoes, halved
- ½ lemon, juice only
- 250g king prawns (bigger the better!) cooked, peeled, and deveined
- Black pepper
- Handful of parsley, chopped
- 160g green beans, steamed, to serve
- Heat the oil in a frying pan. Add the chilli and garlic, and cook gently for 5 mins to soften. Add the tomatoes and lemon juice, and cook for a few minutes more, then add the prawns and cook for another 3 minutes. Remove from the pan, scatter with parsley, season well, and serve with beans. Nice!
