Tomato and Garlic Prawns

  • 1 tbsp olive oil
  • 2 sliced garlic cloves
  • 1 red chilli, deseeded and chopped
  • 150g cherry tomatoes, halved
  • ½ lemon, juice only
  • 250g king prawns (bigger the better!) cooked, peeled, and deveined
  • Black pepper
  • Handful of parsley, chopped
  • 160g green beans, steamed, to serve
  • Heat the oil in a frying pan. Add the chilli and garlic, and cook gently for 5 mins to soften. Add the tomatoes and lemon juice, and cook for a few minutes more, then add the prawns and cook for another 3 minutes. Remove from the pan, scatter with parsley, season well, and serve with beans. Nice!
