  • 200g stilton (or other crumbly blue cheese), crumbled
  • 140g softened butter
  • 2 tsp dry Sherry
  • 1 tbsp green peppercorns in brine
  • Crackers etc to serve
  • Pop the cheese, 100g of butter, and the Sherry into a bowl. Season with black pepper, and mash with a fork until smooth. Spoon the lot into a large ramekin or ceramic pot. Melt the remaining butter in a pan, and spoon it over the cheesy mixture to seal. Top with green peppercorns, and chill for 2 hours. Serve as part of a festive cheese board with crackers or crusty bread.
