Truffle Mac ‘n’ Cheese

  • 250g macaroni or similar
  • 20g butter
  • 25ml black truffle oil
  • 2 tbsp seasoned flour
  • 450ml whole milk
  • 150g extra mature cheddar, grated
  • 200g black truffle cheddar, crumbled
  • 80g mozzarella, chopped
  • handful chives, finely chopped
  • Cook the macaroni in boiling salted water until al dente. Meanwhile, melt the butter and truffle oil in a saucepan, then mix in the flour to make a thick paste. Stir and cook for 2 mins, then whisk in the milk a little at a time to make a smooth white sauce. Add the mature cheddar and half the truffle cheddar, stirring to melt. Season and set aside.
  • Preheat the grill. Add the drained macaroni to the cheese sauce and stir to coat, then add to a baking dish and sprinkle with the remaining truffle cheddar and the mozzarella. Grill for 3 mins or until bubbling and golden, then sprinkle with chives and serve as a side or as a main dish.
