Tuna and Avocado Burgers

  • 250g tuna steak
  • 2 chopped spring onions
  • 5 tsp grated ginger
  • 1 tsp soy sauce
  • 1 avocado
  • 10g chopped coriander
  • ½ lime, juice only
  • Splash of sesame oil
  • 1 tbsp sunflower oil
  • Brioche buns, wasabi mayo and lettuce, to serve
  • Chop the tuna steak as finely as you can with a very sharp knife, then add to a bowl with the spring onions, soy, ginger and some seasoning. Mix with your hands into 2 thick patties, then set aside in the fridge to firm up.
  • Chop the avocado and add to a bowl with the coriander, lime juice, sesame oil and some seasoning. Heat a frying pan and fry the patties in the oil, cooking for 3 mins on each side or until cooked through. Stuff into buns slathered with wasabi mayo, add some lettuce leaves and serve immediately.
