Tuna Melt Quesadillas

  • 150g tin of tuna chunks in water, drained
  • 1 tbsp mayo
  • 40g drained sweetcorn
  • 4 tortilla wraps
  • 40g cheddar, grated
  • 20g chopped spinach leaves
  • 1 tsp olive oil
  • Salad and chips, to serve
  • Mix together the tuna, mayo and corn in a bowl, and season with black pepper. Lay 2 of the tortillas on a board and liberally spread with the filling, being sure to leave a small border. Scatter with spinach and cheese, then sandwich with the other tortilla on top.
  • Heat 1 tsp of olive oil in a large frying pan over a medium heat. Toast the tortilla ‘sandwiches’ for 3 mins on each side, or until golden and crisp, and the cheese has melted. Repeat with the other sandwich, then slice into quarters and serve with chips, salad and anything else you fancy.
