Tuna, White Bean and Red Onion Salad



  • 1 tsp Dijon mustard
  • 2 tbsp olive oil
  • ½ lemon, juice only
  • 200g tinned tuna in spring water, drained and flaked
  • 400g tin of cannellini beans or similar, drained
  • ½ sliced red onion
  • 60g rocket leaves
  • Whisk together the mustard, oil and lemon juice in a small jug and season well. Set aside while you construct the salad.
  • Add the tuna, beans, red onion and a pinch of salt to a bowl. Add the rocket leaves and toss together to combine, being careful not to break up the tuna too much. Drizzle in the dressing and toss again, then divide between two plates and serve with some sliced baguette.
