Turkey, Cranberry and Cheese Wellington
- 400g turkey mince
- 400g turkey steaks, chopped into 2cm chunks
- 2 beaten eggs
- 1 tbsp smokey barbecue sauce
- 1 grated onion
- 2 crushed garlic cloves
- 40g dried breadcrumbs
- 80g pistachio kernels
- Small handful of chopped parsley
- 2 sheets of ready-rolled puff pastry
- 200g sliced brie
- 180g cranberry sauce
- Preheat the oven to 200C. Place the mince, turkey pieces, BBQ sauce, egg, onion, garlic, breadcrumbs, parsley and pistachios in a bowl. Season well and mix to combine. Join the pastry sheets together on one side (overlap by about 2cm) to make one large rectangle. Press to secure.
- Place the cranberry sauce and about half the cheese along one side of the pastry, and top with the turkey mix and the rest of the cheese. Roll over the pastry and seal, then place on a baking tray, score the pastry with a knife, and brush with more egg. Bake the pastry parcel for 45 mins, or until golden and puffed, then serve with steamed greens.
