Turkey Mince Curry
- 1 tbsp oil
- 500g turkey mince
- 1 chopped onion
- 3 chopped garlic cloves
- Thumb-sized piece of ginger, grated
- 2 chopped green chillies
- 2 tsp each ground coriander and cumin
- 1 tsp ground turmeric
- 400ml chicken stock
- 250g peas
- Chopped coriander
- ½ lemon, juice only
- Naan, to serve
- Cook the mince in the oil for 5 mins or until the liquid has evaporated and the meat is golden. Reduce the heat and stir in the onion, then cook for 5 mins to soften. Add the chillies, garlic and ginger and cook for 5 mins more.
- Stir in all the spices and cook for 2 mins, then pour in the stock and simmer for 20 mins. Tip in the peas and heat through, then stir through the coriander and lemon juice. Season to taste and serve with warmed naan.
