Ingredients
Method
- 2 tbsp olive oil
- 1 red onion, chopped
- 1 crushed garlic clove
- 227g chopped tomatoes
- 400g tin of haricot beans, drained
- 1 sprig of rosemary
- 2 slices of sourdough, toasted
- 1⁄4 garlic clove for rubbing
- Salt and pepper
- Gently fry the onion and garlic for a few minutes in the olive oil, then add the tomatoes, rosemary, and beans. Season well and simmer for 5 minutes, stirring occasionally until it thickens. Drizzle some olive oil over your toast and rub with garlic, then pile the beans on top. Perfect!
