Ingredients

Method

  • 2 tbsp olive oil
  • 1 red onion, roughly chopped
  • 1 crushed garlic clove
  • 227g tin of chopped tomatoes
  • 400g tin of haricot beans, drained
  • 1 sprig of rosemary
  • 2 slices of sourdough toast
  • 1⁄4 garlic clove
  • Salt and pepper
  • Gently fry the onion and crushed garlic for a couple of minutes in olive oil, until softened. Add the beans, tomato, and rosemary, and cook for 5 minutes. Season well.
  • Drizzle the toast with olive oil and rub with garlic. Spoon the bean mixture on top, and add some fresh black pepper. Enjoy!
