Two Cheese and Bacon Gnocchi
- 400g gnocchi
- 5 spring onions
- 100g creamy blue cheese
- 250g mascarpone
- 225g baby spinach
- 50g smoked streaky bacon, cooked
- Green salad, to serve
- Slice the spring onions and blue cheese, and spoon the mascarpone into a deep frying pan. Add the blue cheese and spring onions, and leave to melt over a medium heat, stirring occasionally. Meanwhile, cook the gnocchi in boiling salted water, until they rise to the surface.
- Add handfuls of spinach to the cheese mixture, and stir until just wilted. Crumble in half the bacon, stir in the gnocchi, and crumble over the remaining bacon bits. Serve immediately with green salad.
