Ingredients
Method
- 100g sweet potato, peeled and grated
- 400g tin of chickpeas, drained and rinsed
- 2 tbsp tahini
- 25g oats
- 25g coriander, stalks and leaves, chopped
- 3 grated garlic cloves
- 2 tsp cumin
- 1 tsp ground coriander
- Salt and pepper
- Pitta bread and salad to serve
- Put all of the ingredients, apart from the bread and salad, into a food processor. Blend until you have a thick and chunky paste, and then roll into 4 balls which can be flattened into patties.
- Heat a little oil in a pan, and gently fry your patties for 4-5 minutes on each side, until nicely browned and heated right through. Serve in warm pitta breads with salad and a little extra tahini.
