Veggie Burritos
- 400g tin of Mexican bean mix in chilli sauce
- 200g sweetcorn
- 8 tortilla wraps
- 150g long grain rice, cooked
- 1 lime, juice only
- 200g plain yoghurt
- Tomato relish or other spicy sauces
- Heat a small frying pan on a medium heat, and warm the bean mix through for about 5 minutes. Chuck in the sweetcorn and mix well, and season if necessary.
- Heat the tortilla wraps on a dry pan until warm and soft, then divide the cooked rice and beans between the wraps, squeeze on some lime, and spoon on a dollop of relish and yoghurt. Roll up the wraps, and enjoy!
