- 2 poached chicken breasts, shredded
- 1 ripe mango, diced
- ½ wombok (Chinese cabbage), finely shredded
- 1 large carrot, julienned
- 1 Lebanese cucumber, thinly sliced
- ½ cup fresh mint and coriander leaves
- ¼ cup roasted peanuts, roughly crushed
- For the Dressing
- ¼ cup lime juice
- 2 tbsp fish sauce
- 1 tbsp rice wine vinegar
- 1 tsp palm or brown sugar
- 1 small red chilli finely sliced
- Whisk together lime juice, fish sauce, vinegar, sugar and chilli to make the dressing.
- In a large bowl, combine the wombok, carrot, cucumber and most of the mango. Add chicken and toss with dressing.
- Transfer to a serving platter, scatter over remaining mango, fresh herbs and crushed peanuts. Serve immediately.
