Vietnamese Pork Noodle Soup

  • 2 pork ribs
  • 1 tbsp sunflower oil
  • Salt and pepper
  • 1⁄2 red chilli, chopped
  • 1 garlic clove, chopped
  • 150ml hot beef stock
  • 100g egg noodles, cooked to pack instructions
  • 2 tsp sesame oil
  • Chopped coriander, to serve
  • Season the pork ribs well, and fry for 2-3 minutes in a hot pan until lightly browned all over. Add the garlic and chilli to the same pan, and stir fry for about a minute.
  • Pour in the stock, and bring it all up to the boil. Reduce the heat and simmer for 10-12 minutes, or until the ribs are totally cooked through and the sauce has reduced a bit. Add in the cooked noodles and sesame oil, give it all a good stir, and then serve in a bowl with some coriander scattered over the top. Easy peasy!
