Ingredients
Method
- 4 large baking potatoes
- 2 tsp olive oil
- Salt and pepper
- 200g soft cheese
- 2 celery stalks, sliced
- Small red onion, finely sliced
- 1 eating apple, cored and chopped
- 50g walnut pieces
- Chopped chives
- Preheat the oven to 160C. Prick the potatoes all over with a fork, and rub with olive oil, salt, and pepper. Place on a roasting dish, and bake in the oven for about an hour and a half, or until the skins are crispy and the centre very soft and fluffy.
- Make the topping by mixing together the cheese, onion, celery, apple, and walnuts, and season to taste. When ready to serve, cut the potatoes open, and spoon the topping generously all over. Sprinkle with chopped chives, and serve with leafy greens.
