Warm Lamb Salad Recipe
What you'll need:
- 250g lamb steak
- Salt and pepper
- Olive oil
- 2 garlic cloves, lightly crushed
- 2 sprigs of rosemary
- 75g walnut halves
- 75g green beans, blanched
- Handful of chopped parsley
- 1 tsp balsamic vinegar
Time: 30 minutes
Serves: 1
Method
First
Get things going by preheating your oven to 200C. Rub your lovely lamb steak all over with plenty of olive oil, and season liberally with the salt and pepper.
Second
Heat an ovenproof frying pan until nice and hot, add the rosemary and garlic, then sear your lamb on both sides for 2-3 minutes. Transfer the pan to the oven, and cook for a further 10 minutes. You want it cooked, but quite pink in the middle.
Third
Mix all the other ingredients in a bowl, drizzle with a little olive oil, and tip onto a plate. Slice the lamb into four slices, and add on top of the salad. Serve hot.
Wine Match
This lamb salad will go brilliantly with a perfectly-pitched Montevideo wine. Pair this dish with the Pizzorno 'Don Prospero' Tannat/Merlot 2016 -- it is definitely going to be a match made in heaven!
