Ingredients
Method
- 600g quality brie
- 80g chopped dates
- 120g rocket leaves
- 100g croutons
- 100g halved walnuts
- For the Dressing
- 6 tbsp walnut oil
- 2 tbsp balsamic vinegar
- Carefully remove the rind of the brie and discard. Add the cheese to a bowl, then whisk thoroughly until pale, creamy and spoonable. Once done, add the oil and vinegar to a separate small bowl, whisk together and season to make a dressing.
- Add the walnuts to a salad bowl with the rocket and dates, and mix in a splash of the dressing. Add a spoonful of the whipped cheese to the centre of each serving plate, arrange the salad around it and drizzle with some dressing to serve.
