Whipped Cheese Dip with Pita Chips

  • 3 pitas
  • 3 tbsp olive oil
  • 1 tsp smoked paprika
  • 100g cream cheese
  • 200g ricotta
  • 1 crushed garlic clove
  • 15g chopped parsley
  • 30g basil leaves, chopped
  • 1 lemon, zest only
  • Preheat the oven to 180C. Put the pitas into 4cm triangles, place on a baking tray and drizzle with 2 tbsp of olive oil, the paprika and some sea salt. Bake for 12 mins, turning halfway.
  • Meanwhile, beat the cheeses, garlic, herbs and lemon zest for 3-4 mins in a bowl until light and airy. Transfer to a serving bowl, drizzle with some olive oil and scatter with more basil and lemon zest. Serve with the homemade pita chips for dipping, or with crudites and anything else you fancy.
