White Fish with Coconut and Lime
- 2 limes
- 100g creamed coconut block, chopped
- 1 green chilli, chopped
- Handful of coriander leaves, chopped
- Thumb-sized piece of ginger, chopped
- 2 chopped garlic cloves
- ½ tsp Thai fish sauce
- 4 pieces of firm white fish, skin on (eg cod)
- Steamed rice and broccoli, to serve
- Preheat the oven to 200C. Zest and juice the limes, and pop in a food processor with all the remaining ingredients apart from the fish. Blitz to a smooth paste, adding more fish sauce if necessary.
- Place the fish on a baking tray, and spread liberally with the coconut mixture. Bake for 15-20 mins, or until the fish is cooked through and flaky, then serve immediately with steamed sticky rice and broccoli.
