White Fish with Paprika Butter

  • 1 tbsp olive oil
  • 2 tbsp seasoned flour
  • 2 x 125g white fish fillets (e.g. basa or haddock)
  • 50g butter
  • 3 sliced spring onions
  • 2 grated garlic cloves
  • 1 tsp smoked paprika
  • Steamed vegetables, to serve
  • Add the olive oil to a frying pan and heat. Put the seasoned flour on a plate, season the fish fillets, then dip in the flour to lightly coat. Cook the fish in the oil for 3 mins on each side (or until golden and just flaking), then remove and drain on kitchen paper.
  • Add the butter to the hot pan. Once foaming, stir in the garlic, spring onions, a pinch of salt and pepper, and the paprika. Cook for 2 mins, then pour over the fish and serve with your choice of vegetables.
