Wholemeal Linguine with Smoked Salmon and Avocado



  • 200g wholemeal linguine
  • 1 avocado
  • 2 tbsp olive oil
  • 1 clove of garlic
  • 1 small bunch of parsley
  • 1 lemon
  • 100g smoked salmon, sliced into strips
  • Cook the linguine in salted boiling water until al dente. Meanwhile, whizz the avocado, oil, garlic, a squeeze of lemon, half the parsley and plenty of seasoning in a food processor.
  • Once the pasta is cooked, reserve about 100ml of the cooking water, and drain the rest away. Toss the avocado mix through the linguine, along with the salmon and reserved water. Season well, add a squeeze of lemon, and stir through the remaining chopped parsley. Serve.
