  • 1⁄2 pack firm tofu, dried and cut into 3x 1cm slices
  • 1 lime, zest and juice
  • 2 tsp honey
  • 1 sliced garlic clove
  • Olive oil, for drizzling
  • 1 handful roasted peanuts
  • Toasted ciabatta, to serve
  • Chopped coriander, to serve
  • Preheat the oven to 200C. Place the tofu slices in an ovenproof dish, and scatter with the remaining ingredients and drizzle with the oil. Bake for 5 minutes, and serve with your toasted bread and coriander. Simple perfection!
