Ingredients
Method
- 4 tbsp olive oil
- 1 red onion, finely sliced
- 375g zucchini, diced
- 6 eggs
- 2 tbsp chopped mint
- Salt and pepper
- Heat the oil in an ovenproof frying pan. Add the zucchini and onion, and fry for 5 minutes. Preheat the grill, and beat the eggs, 2 tbsp of water, and the chopped mint together. Season well with salt and pepper.
- Pour the egg mix into the frying pan, and cook without stirring for 4 minutes. Transfer the pan to the hot grill, and cook for 4 minutes or until the frittata is cooked through. Cut into wedges and serve with salad. Delicious!
