  • 120g grated zucchini
  • 1⁄2 tsp salt
  • 1⁄2 tsp baking powder
  • 1 egg, beaten
  • 1 1⁄2 tsp ground cumin
  • 3 tbsp plain flour
  • 50g frozen peas
  • Vegetable oil for frying
  • Black pepper
  • Season your zucchini with some sea salt and set aside. Take a mixing bowl and whisk together the egg, flour, baking powder and cumin, and season with black pepper. Add the peas to the batter, then squeeze out the excess water from the zucchini, and chuck that in as well.
  • Heat some oil in a large frying pan, and once sizzling, drop in a heaped tablespoon of the fritter batter, and slightly flatten them in the pan with the back of the spoon. Fry for 2-3 minutes on each side, or until golden brown. Drain on kitchen paper, and serve hot with chutney or yoghurt dip.
