Ingredients
Method
- 2 tbsp veg oil
- 1 red onion, finely chopped
- 2 stalks of celery, finely chopped
- 2 red chillies, finely chopped
- 2 garlic cloves, finely chopped
- 1 tsp salt
- 1 tsp cayenne pepper
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 tsp white pepper
- 1 bay leaf
- 150ml veg stock
- 400g tinned tomatoes
- 24 okra
- 400g sweet potato, peeled and cubed
- 100g shredded cabbage
- Heat up a large pan with the oil. Gently fry the onion, celery, chillies, and garlic for 5 minutes. Meanwhile, mix together the salt, cayenne pepper, thyme, oregano, white pepper, and bay leaf until well combined, then add to the pot and coat the veggies with it. Fry for 3 minutes.
- Add the stock, tomatoes, and okra, and cook for 10 minutes, then chuck in the sweet potato and cabbage, and cook for another 10 minutes or so. Serve in a bowl with crusty bread and share with your mates.
