10 Minute Pad Thai



  • 200g rice noodles
  • 150g frozen peas
  • 200g frozen cooked and peeled prawns
  • 100g beansprouts
  • 2 tbsp oil
  • Bunch of spring onions, chopped
  • 2 eggs, beaten
  • 3 tbsp roasted peanuts
  • 2 tbsp Thai sweet chilli sauce
  • 2 tbsp dark soy sauce
  • Coriander, chopped
  • Boil a pan of water and add the noodles to cook for 3 mins. Toss in the peas and prawns for the final minute, then drain and set aside.
  • Add the oil to a frying pan and fry the noodles, prawns, peas, spring onions and beansprouts, tossing well for a few minutes. Push it all to one side of the pan and pour in the beaten eggs. Stir until cooked, then mix everything together. Scatter in the peanuts and add the soy sauce and chilli sauce, then mix well and serve with plenty of coriander.
