Ingredients
Method
- 500g grated potato
- 100g grated apple
- 2 sliced shallots
- 1 tsp salt
- 1 tsp coriander seeds
- 3 tbsp self-raising flour
- 2 eggs
- Handful of parsley, chopped Veg oil for frying
- Apple chutney, to serve
- Place the grated apple and potato in a sieve with the shallots, and mix with the tsp of salt. Set aside for about 25 mins. When ready, squeeze the mixture to remove excess liquid, then tip the lot into a mixing bowl with all the rest of the ingredients. Mix to combine.
- Heat the oil in a pan to sizzling temperature, and fry dollops of the fritter mixture until golden and crispy on both sides. Drain on kitchen paper, then serve with chutney. Delicious!
