Bacon, Mushroom, and Tomato French Toast Brunch

  • 4 rashers of bacon
  • 100g cherry tomatoes, halved
  • 2 tbsp tomato chutney
  • 100g chestnut mushrooms, halved
  • ½ tbsp olive oil
  • 1 egg
  • 300ml milk
  • 4 slices of quality white bread
  • 2 tbsp butter
  • Preheat the grill to high, and when hot, grill the bacon for 5 mins and set aside. Put the tomato halves in a baking tray, and grill for 5 mins, then mix with the chutney and set aside.
  • Meanwhile, fry the halved mushrooms in ½ tbsp of olive oil until golden and tender. Beat the egg with the milk in a shallow dish, and add the bread. Leave to soak for 1 min, turning once, then fry in butter in a frying pan until golden on both sides. Pile high with the tomato mix, the mushrooms, and bacon, and serve immediately.
