  • 100g feta
  • Small handful of mint, chopped
  • 1⁄2 tomato, sliced
  • 1 tsp chilli flakes
  • Squeeze of lemon juice
  • 1 tbsp olive oil
  • Salt and pepper
  • 2 tbsp kalamata olives
  • Small handful of parsley, chopped
  • 1 poached egg, to serve
  • Preheat the oven to 180C. Place the cheese, mint, tomato, chilli, and a splash of olive oil on some aluminium foil. Season well, then fold the sides to make a parcel. Squeeze over the lemon, pop it in the oven, and bake for 10 minutes.
  • Serve by spooning the baked cheese onto a plate, and scatter with parsley and olives, before placing a poached egg on top. Drizzle with some more olive oil, and serve with bread.
